Mango curry sauce

Quick and easy to make, yet an explosion of flavours

  1. Heat the sesame oil in the pan, add the mango cubes
  2. While that is starting to simmer, beat the coconut milk so that it is nice and frothy
  3. Pour the coconut milk onto the mangos, add the star aniseed and madras curry mixture
  4. Let this all simmer at about 85°C for around 15 minutes
  5. Purée when done, make sure the star aniseed is properly puréed, otherwise it can become a rather unpleasant crunchiness.
