Greg's Madras curry paste

Ingredients
- 1 tbsp coriander seeds
- 1 tbsp cumin seeds
- 2 garlic cloves, peeled and crushed
- 2 tsp freshly chopped chillies
- 1 tsp turmeric
- 2 tsp chopped ginger
- 5 tsp salt
- 2 tbsp olive oil
Instructions
- Pound the seeds, chopped ginger and chillies in a mortar
- Transfer the mixture to bowl, add the other ingredients and mix well together
