American Corn Fritters

Ingredients

  • 350g canned Sweetcorn Kernels, drained120ml Milk25g Butter3/4 tsp Salt2 tsp Sugar1 tsp Baking Powder100g Flour2 large Eggs, well beaten3 tbsp finely chopped OnionOil for griddle or frying pan

Instructions

  1. Place the drained corn, finely chopped onion and well beaten eggs in a bowl. Mix well.
  2. Sift the flour, baking powder, sugar and salt into a small bowl.
  3. Melt the butter and then blend it into the sweetcorn and onion mixture with the milk and sifted flour.
  4. Spoon a ladle of the sweetcorn batter on to the griddle or iron frying-pan to make a fritter. Pat the fritter into shape with a spatula. When the underside is firm and cooked, turn with a fish slice and cook until the second side is golden brown. Continue to make fritters in this way.
  5. Brush a griddle or iron frying pan with oil, then heat until the oil starts to smoke.
