- Cook the aubergines at medium heat on the grill, turning every 5 - 8 minutes
- You'll know the aubergines are done when they split open by themselves and you can see the flesh falling away from the skin
- Peel the skin off and put the flesh in a colander, gently press the aubergines to squeeze out some of the liquid
- Mix the other ingredients together in a bowl
- Roughly chop the aubergines and add them to the bowl, mix and check seasoning
