  1. Cook the aubergines at medium heat on the grill, turning every 5 - 8 minutes
  2. You'll know the aubergines are done when they split open by themselves and you can see the flesh falling away from the skin
  3. Peel the skin off and put the flesh in a colander, gently press the aubergines to squeeze out some of the liquid
  4. Mix the other ingredients together in a bowl
  5. Roughly chop the aubergines and add them to the bowl, mix and check seasoning
