Creamy courgette and potato soup

Instructions

  1. Chop 2 courgettes + 250 g potatoes into chunks.
  2. Simmer in 750 ml stock until potatoes are soft (about 12–15 min).
  3. Blend smooth.
  4. Stir in 60–100 ml milk (or a small splash of cream).
  5. Season with salt and a touch of white pepper.
  6. Finish with chopped chives/parsley.
