- Chop 2 courgettes + 250 g potatoes into chunks.
- Simmer in 750 ml stock until potatoes are soft (about 12–15 min).
- Blend smooth.
- Stir in 60–100 ml milk (or a small splash of cream).
- Season with salt and a touch of white pepper.
- Finish with chopped chives/parsley.
