Carrot & glass noodle salad

For the salad

  1. Boil a pot of water, when boiling add the glass noodles. Follow instructions to see how long they need to be boiled for.
  2. Dice the onion and lightly fry till glassy
  3. Grate the carrots into the salad bowl (or cheat and buy pre-grated ones)
  4. Slice up the mango and add it to the salad bowl
  5. Add the ginger, Thai basil, glass noodles and onions to the salad bowl

Now mix the ingredients for the sauce together, stir until the hoisin sauce is no longer as sticky and then pour the sauce over the salad and toss.

I suggest grinding a bit of the Szechuan pepper over the salad once you have tossed it and then tossing it again.
