- Take the ribs out of the fridge about 2 hours before you want to eat them.
- Using a piece of kitchen paper, pull the skin off the bone side of the ribs.
- Salt the "meaty" side of the ribs and let them warm up at room temperature.
- Heat your barbecue to around 180 - 200 degrees C.
- Place the ribs on indirect heat and let them cook on the bone side down.
- Prepare the glaze by mixing the apricot jam with the finely chopped ginger.
- After the ribs have been cooking for around 45 minutes, you can brush the glaze onto them.
- Keep an eye on the ribs, as dripping glaze may flare up when it hits the barbecue walls.
- After another quarter of an hour, the ribs should be ready to enjoy!
