Ingredients

2 good quality chicken breasts
salt
spice rub (optional)

Instructions

Take the chicken breasts out of the fridge about 30 minutes before you want to cook them
Wash them and pat dry with kitchen paper
Salt the breasts and / or use the spice rub
Get your grill up to the hottest temperature (direct heat)
Grill the chicken (spice side up) for 3 minutes then flip to the other side for another 3 minutes
Turn grill heat down to half power and move the breasts to indirect heat for a further 4 minutes
Take off the grill and let rest in aluminium foil for 2-3 minutes

Goes well with Spanish pepper salad
