These roasted potatoes are everything they should be: crisp, golden, fluffy inside, and full of flavour from olive oil, salt and rosemary. A simple classic that works brilliantly alongside roast chicken, meat dishes, or on their own.

Notes: Agria are ideal because they’re relatively floury and roast very well. Other floury or all-purpose potatoes will also work well. If you want a softer, less crisp result, you can roast at 180°C fan, but 200°C fan will usually give better colour and texture.

  1. Prep the potatoes
    Choose potatoes of a similar size so they cook evenly. If the skins are clean and not full of eyes, leave them on. Otherwise, peel them.
  2. Parboil
    Halve the potatoes and place them in a pan of salted water. Bring to the boil and cook for about 10 minutes, until the edges are just starting to soften.
  3. Drain and rough up
    Drain well, then give the potatoes a gentle shake in the pan so the surfaces get slightly roughed up. That’s what helps them go crisp instead of merely beige.
  4. Season
    Transfer to an oven dish. Toss or brush generously with olive oil, then season with salt.
  5. Roast
    Roast in a fan oven at 200°C for about 35 to 45 minutes, turning once or twice, until deeply golden and crisp.
  6. Add rosemary
    Sprinkle over a little rosemary about halfway through roasting so it doesn’t burn.
