These roasted potatoes are everything they should be: crisp, golden, fluffy inside, and full of flavour from olive oil, salt and rosemary. A simple classic that works brilliantly alongside roast chicken, meat dishes, or on their own.
Notes: Agria are ideal because they’re relatively floury and roast very well. Other floury or all-purpose potatoes will also work well. If you want a softer, less crisp result, you can roast at 180°C fan, but 200°C fan will usually give better colour and texture.

- Prep the potatoes
Choose potatoes of a similar size so they cook evenly. If the skins are clean and not full of eyes, leave them on. Otherwise, peel them. - Parboil
Halve the potatoes and place them in a pan of salted water. Bring to the boil and cook for about 10 minutes, until the edges are just starting to soften. - Drain and rough up
Drain well, then give the potatoes a gentle shake in the pan so the surfaces get slightly roughed up. That’s what helps them go crisp instead of merely beige. - Season
Transfer to an oven dish. Toss or brush generously with olive oil, then season with salt. - Roast
Roast in a fan oven at 200°C for about 35 to 45 minutes, turning once or twice, until deeply golden and crisp. - Add rosemary
Sprinkle over a little rosemary about halfway through roasting so it doesn’t burn.
