Basic recipe makes about 20-25 amaretti
Notes: The amaretti are done if they’re soft to the touch, yet expanded and “cracked”. To make life easier, just buy egg whites in the supermarket. You need roughly 60 g.

Ingredients
- 200 g cane sugar
- 200 g ground almonds
- 2 egg whites
- Pinch of salt
- Almond extract
- Powdered sugar (optional)
Instructions
- Mix the dry ingredients together for about a minute on low speed in your kitchen mixer. If Kenwood, use the K-beater.
- Set your oven to fan, 160 C
- Place egg-whites in a bowl and beat with a fork for 30-60 seconds until frothy.
- Add the egg whites to the kitchen machine and mix on lowest speed with the K-beater for about 1-2 minutes.
- Add 1.5 tsp almond extract to the mix
- Wet your hands and roll small balls of the dough. Lay them out on the parchment paper on your oven tray.
- Cook for approximately 15 minutes.
- Take out of the oven and press gently with a spoon to give them a more distinctive amaretti shape.
- Put back in the oven for three minutes.
- Remove from oven and let rest for 5 minutes before transferring to a wire rack to cool.
- Dust with powdered sugar if desired.
